Cerro Baul is a Wari imperial outpost on a steep mesa at 2,590 metres elevation in the Moquegua Valley of southern Peru, occupied between approximately 600 and 1050 CE. The site sits at the southernmost extent of Wari territorial expansion and represents the empire's frontier with the contemporary Tiwanaku polity to the south. Excavations by Patrick Ryan Williams, Donna Nash, and colleagues since 1989 documented elite residential compounds, a temple, and a state-run brewery capable of producing chicha de molle in 1,800-litre batches. The brewery was ritually closed and burned around 1050 CE in a final ceremony that included smashing six elite drinking vessels — a deliberate site-closing act before abandonment. The location itself is geographically severe; access requires a steep climb up loose talus to the flat mesa top.

The compound foundations of fieldstone and mortar still outline the rooms across the wind-scoured summit, the lower brewery hearths blackened with the residue of the closing fire.
